Kasey’s Chicken Quesadillas

Hey Friends! Today I thought I would share with you guys a super simple recipe that I make all the time…chicken quesadillas! 

 Now I know you all know how to make chicken quesadillas…but in our household we put our own spin on it, but it’s still super easy!

 The ingredients I use are usually kept in our home, the only thing I usually have to remember to purchase is the tortillas. Also, this is a super flexible recipe, and also super budget friendly!

 To start I boil my chicken, while the chicken is cooking, I preheat the oven and butter the tortilla shells on the side that will be facing out. 

Once my chicken is finished cooking, I shred it. My favorite trick is to shred it in my kitchen-aid mixer, super quick and easy!

 Once the chicken is shredded then I add the spices, and the salsa. I definitely eye-ball the salsa for how much I think I need. You definitely want all the chicken to be covered and moist! It looks kind of gross at this point, but trust me it’s great! 

 It’s fun too because you can change up your salsas for different quesadilla flavors, such as switching to a pineapple mango salsa, whatever you want! Also if you are out of the spices, you can totally go without them!

 Next it’s time to stuff the tortilla shells! You put your chicken mix on and then add on the cheese. I have used all types of cheese, and it’s always fun to change it up! Also, it’s totally up to you on how much you add to each shell. I feel like you can definitely make this go farther, even past just one package of tortillas. (I definitely could have this go round). Just depends on how much chicken you cooked!

 Then you just pop them in the oven for around ten minutes. You can leave them in longer if you want your tortillas crispier! 

 Ingredients: 

 -1 package of chicken breast (about one pound)

 – Jar of salsa

 -1 teaspoon of ground cumin

 -1/2 teaspoon oregano

 – salt to taste

 -melted butter (a little less that 1/4 cup)

 -package of tortillas

 -2 cups of cheese

 -topping of your choice 

 Directions

1. Boil chicken until fully cooked. Preheat oven to 375 degrees. Melt butter and spoon onto tortillas, cover the underside of the tortilla with butter. 

2. Shred chicken and then mix in cumin, oregano, salt, and salsa. Amount of salsa to use is up to you, just make sure all the chicken is moist. 

3. Place chicken mix on tortillas and top with cheese. Bake in oven for 10 minutes or until crispy. 

4. Top with your choice of toppings.
